One of the most prevalent questions 
we hear from guests visiting 
Shannondell for the first time is in 
regard to the quality and breadth of 
our dining program. 
	
When these same guests 
discover our two clubhouses offer 
multiple dining venues from bakery 
and bistro menus to brick-oven pizza, full buffet, 
seated dining service, and take-out, they’re impressed. 
But the proof is in the pudding. And our kitchens don’t 
disappoint, for good reason. 
	
A staff of highly-trained chefs and sous chefs 
oversee the menus, individual dishes and presentations, 
as well as the wine lists and spirit selections in our 
clubrooms. So, it should come as no surprise that these 
same chefs have recently started offering cooking 
classes and coordinating tastings within their vintner/
distillery/brewery network as part of our lifelong 
learning program. 
	
These hands-on Epicurean classes and tastings 
have become very popular, not just among 
Shannondell residents, but also for the kitchen staff. 
States dining director Mike Capacino, “You might 
think adding tasks to an already full day in the kitchen 
would induce sighs from our team. But it’s just the 
opposite. Most everyone is vying for the chance to 
help with these afternoon classes. They’re a proud 
bunch and this enjoyment is echoed by our residents.” 
From Winter Wonderland Wines ... to Desserts From 
the Heart and, most recently, Lettuce Celebrate Spring, 
offerings cover the gamut of personal tastes and diets.

recipes, ask questions, then sample the ending dish.

Needless to say, there tends to be a bit more sampling 
taking place with wine tastings. Speaking of, as 
part of our community-wide activities celebrating 
America’s 250th, Sommelier Hudson Austin will be 
hosting a July tasting focused on America’s Leading 
Independent Wines. Selections range from a New York 
Riesling to several West Coast family vintners. 
	
Encouraging residents to challenge and expand 
their palates and preferences ... just one more way
